Nitrite Meat-Curing Reaction-Diffusion Simulator (2D)

2D companion to the 3D nitrite meat-curing model: the same Fick-diffusion + acid-catalyzed reaction equations, watched as a live cross-section where curing brine enters from the top and one side, with pH, temperature and dose sliders and a depth-profile chart.

This is the 2D counterpart to the 3D voxel scene, running the identical reaction-diffusion physics on a cross-section: sodium nitrite (NaNO2) diffuses in from a fixed-concentration curing brine touching the top face and one side face, breaks down under acid catalysis into nitric oxide, and that NO does two jobs at once — it binds myoglobin to lock in the pink cured colour, and it attacks the iron-sulfur enzymes bacterial spores need to germinate. Each grid cell's colour and bacterial-viability marker update from its own accumulated NO dose, and a depth-profile chart along the mid-width column tracks residual nitrite and cure fraction over time. Sliders for surface dose, pH, temperature and simulation speed let you see why curing science treats colour and food-safety as two separate, dose-dependent outcomes rather than one.
