Sodium nitrite (NaNO2) is the workhorse curing agent behind bacon, ham and hot dogs: it diffuses into meat, breaks down under acid catalysis into nitric oxide, and that NO does two jobs at once — it binds myoglobin to lock in the pink cured colour, and it attacks the iron-sulfur enzymes bacterial spores need to germinate. This simulator runs a real 3D reaction-diffusion model of that process on a voxel grid: nitrite enters from a fixed-concentration curing brine at the top face, diffuses and reacts through the slab, and each voxel's colour and bacterial-viability marker update from its own accumulated NO dose. Sliders for surface dose, pH, temperature and simulation speed let you see why curing science treats colour and food-safety as two separate, dose-dependent outcomes rather than one.
