This simulator freezes two identical blocks of food tissue side by side under different cooling rates: the left block cools slowly, the way a household freezer would; the right block cools almost instantly, the way liquid nitrogen at -196 °C would. Each block is a lattice of cells that can rupture, and ice crystals grow between them as freezing proceeds — large and jagged on the slow side, fine and dust-like on the fast side. Watch the live crystal-size and cell-damage readouts diverge as the same amount of water freezes in two very different ways, and see why cryogenic freezing preserves texture that slow freezing destroys.
