🔬 What It Demonstrates
Heating or long warm storage raises HMF while destroying the diastase enzyme — the same inverse relationship labs rely on to spot overheated or aged honey. Adulterated syrup samples show a collapsed pollen count even when other numbers look normal.
🎮 How to Use
Drag the heat/storage stress and moisture sliders to watch each instrument react in real time, switch the sample to a syrup blend to see pollen vanish, and use the focus dropdown to zoom into any single station.
💡 Did You Know?
Because HMF and diastase move in opposite directions when honey is heated, a sample with high HMF but unexpectedly high diastase raises suspicion that enzymes were added back after the honey was damaged by heat.
