This 2D companion drives the same nucleation-and-growth model as the 3D jar through a plain canvas view built for reading the kinetics directly: a jar cross-section shows the crystal front advancing from the base as glucose monohydrate nucleates, a live graph plots the crystallized fraction against elapsed time to trace the S-shaped growth curve, and a rate-vs-temperature panel shows exactly where the current storage temperature sits on the Gaussian nucleation-rate response — while an irreversible HMF quality meter tracks heat damage the moment the water bath is pushed past 40°C.
