Why infused honey is not automatically as safe as plain honey

Pure honey is one of the most stable foods there is, largely because its low moisture content and acidity keep water activity below the level microorganisms need to grow. Fresh fruit, fresh herbs, fresh flowers, or anything else carrying meaningful moisture will raise the overall water activity of the finished jar, sometimes only in a thin layer immediately around the added ingredient, but enough to let the honey's own naturally occurring yeasts start fermenting.

This is why flavoured or infused honey needs to be treated as its own product with its own safety checks, rather than assumed to inherit honey's shelf stability automatically. A jar that ferments in storage will develop gas, foam, and off-flavours, and in a commercial context that is both a quality failure and, depending on how the product was sold, a potential regulatory problem.

Water activity versus moisture content

Moisture content, the figure a refractometer gives as a percentage, measures total water in the honey. Water activity measures how much of that water is actually available to microorganisms, and it is water activity, not moisture percentage alone, that determines fermentation risk once other ingredients are involved. Pure honey typically sits at a water activity of around 0.55 to 0.60, comfortably below the roughly 0.60 threshold at which most spoilage yeasts and bacteria can start to grow.

Adding an ingredient with even a modest amount of free water can push a small pocket of the jar above that threshold even if the honey as a whole still tests as normal on a refractometer. A water activity meter, which measures the vapour pressure of a small sealed sample rather than its bulk sugar concentration, is the only reliable way to check an infused batch properly, and it is worth testing each new recipe rather than assuming a formulation is safe because a similar one was fine.

Choosing ingredients that keep honey stable

The safest additions are dried, dehydrated or freeze-dried ingredients: dried herbs and spices, commercially dried fruit pieces, dehydrated botanicals, and things like whole vanilla pods, all of which contribute flavour without meaningfully raising water activity. Essential oils, used sparingly and diluted correctly, are another low-risk option since they contribute no water at all, though food-grade certification and correct dosage matter for both safety and taste.

Fresh ingredients are the real hazard. Fresh berries, fresh herbs, fresh citrus peel, or fresh flowers all carry enough water to create localised high-moisture pockets, and mould or yeast growth around a piece of fresh fruit in a jar of honey is a common and entirely predictable failure. If a recipe calls for a fresh-tasting ingredient, freeze-drying it first, or using a food-grade extract instead, keeps the flavour without the risk.

Building the infusion safely

Most infusions work by steeping the dry ingredient directly in warmed honey for anywhere from a day to a few days, allowing flavour compounds to migrate into the honey before straining out any solid material that is not meant to stay in the jar. Keeping the honey gently warm during this period, generally no hotter than is needed to reduce viscosity for easier mixing, speeds up flavour transfer without pushing into the temperature range that damages enzymes.

Testing water activity after each new formulation, and again a few weeks into storage, catches problems before they reach a customer. A batch that tests safely on day one but creeps upward over weeks in storage suggests either an ingredient that is releasing moisture slowly or a container that is not sealing properly, both of which are worth investigating before the recipe is repeated at scale.

Labelling and small-batch compliance

Once honey stops being 100% honey, the label needs to say so clearly and completely. Every added ingredient should be listed in descending order by weight, the product name should describe what is actually in the jar rather than a vague marketing term, and any of the recognised allergens present, even in small trace amounts from an extract or oil, needs to be declared. A jar labelled simply 'infused honey' with no ingredient breakdown falls short of what most food labelling rules expect, regardless of jurisdiction.

Small producers selling directly at markets or through local shops usually operate under simplified home-production or cottage-food style rules, but those rules still generally require basic labelling, batch records, and allergen declarations, and usually cap the sales channels and volumes allowed before full commercial food business registration becomes necessary.
