🔬 What It Demonstrates
Crystallization peaks around 12–16°C and stalls at temperature extremes; fermentation needs both warmth and water activity above roughly 19%; and heat-driven HMF buildup darkens honey and erodes quality independently of both.
🎮 How to Use
Set the storage temperature, starting water content and container seal, then fast-forward simulated days with the time-lapse slider. Watch the crystal, fermentation and HMF stats respond live, and reset the jar to try a new combination.
💡 Did You Know?
Crystallized honey isn't spoiled — it's a normal, reversible physical change. Fermentation, unlike crystallization, is genuinely a spoilage process caused by osmophilic yeasts that only thrive when moisture is too high.
