Honey colour and clarity respond to temperature the way real export honey does: crystallising pale and grainy in the cold, staying clear amber in the export sweet spot, then darkening toward fermentation risk as temperature climbs — with the effect worsened whenever active cooling is switched off.

Honey granulates fastest in the 10–15°C band, which is why many export cold chains deliberately target a warmer stable range or a hard-cold storage regime rather than letting a shipment drift through that mid-range zone.
