Complex Coacervation Nanoencapsulation

This simulator models the electrostatic self-assembly used to nanoencapsulate omega-3 fish oil and fat-soluble vitamins for food and supplement products: a globular protein and an oppositely charged polysaccharide complex around an oil droplet and deposit as a protective wall. Tune pH, the protein-to-polysaccharide ratio, ionic strength and oil load to see the coacervate shell thicken or stay porous in real 3D, while live readouts track the pH-window fit, complexation strength, wall thickness, encapsulation efficiency and an oxygen-barrier shelf-life estimate that explains why nanoencapsulation measurably slows lipid oxidation.
