🔬 What It Demonstrates

Uniform knife cuts cook evenly because every piece has the same surface-to-volume ratio; ragged cuts cook unevenly. Meanwhile, above roughly 140–150°C the Maillard reaction browns the pan surface — the visible chemistry behind seared flavour.

💡 Did You Know?

The Maillard reaction was named after French chemist Louis-Camille Maillard in 1912, and is distinct from caramelisation — it needs both amino acids and sugars, which is why meat, bread crust and onions all brown differently.
