A classic rule of thumb: replace 1 cup of sugar with about ¾ cup of honey, reduce other liquids by roughly a fifth, and drop the oven temperature by about 15°C (25°F) — honey's fructose caramelises at a lower temperature than table sugar, so bakes brown faster.

Honey's fructose speeds up the Maillard reaction and caramelisation, browning bakes faster; its extra moisture can blunt rise unless other liquids are trimmed. Separately, honey crystallises fastest at cool room temperature and redissolves when warmed.
