Once collected, fresh pollen is roughly 20–30% moisture and will mould within days unless it is dried promptly to under 8% moisture, then stored cool and dark to protect its enzymes and nutrients for market.
Because fresh pollen is a live, nutrient-dense food, most producers dry a batch within hours of collection and never exceed about 40–45°C, trading a slightly longer drying time for a product that keeps its colour, aroma and nutritional value for the shelf.
