Before a batch of honey can be exported or sold under a quality mark, an accredited laboratory runs it through a panel of standard tests. This bench shows three of the most common: HMF (hydroxymethylfurfural), a marker of heat damage and age; moisture content, measured by refractometer, which controls fermentation risk; and adulteration testing, which screens for cheap sugar syrups blended into genuine honey.
Many export contracts require an accredited lab report on every batch — because HMF, moisture and adulteration each have hard regulatory limits, a shipment can be legally rejected on paper before a single jar is opened.

HMF forms faster the hotter and longer honey is stored; moisture above ~20% risks fermentation; and blended syrup shows up as a distinct sugar signature. Each has its own regulatory limit, and all three combine into one pass/fail lab verdict.
