🔬 What It Demonstrates

HMF accumulates and diastase activity decays together as heat and time increase — the same underlying chemistry, moving in opposite directions, that regulators use as a proxy for overheated or aged honey.

Move the moisture, temperature and storage-time sliders and toggle pasteurisation. Watch the refractometer, HMF tube colour, and diastase dial respond, and check the pass/fail badge against real UK/EU thresholds.

💡 Did You Know?

Because both HMF and diastase respond to the same heat/time exposure, testing labs use them together: a honey with low diastase and high HMF is a strong sign it was overheated, even without knowing its history.
